Customize Sales Activity Report to Show as Matrix

Navigate to Reports > New Report > Select Sales Activity. In the "Select the format of the report" section, choose Matrix. 

Choose values for Component, Field, and Column. Example: Component is Sales Activity. Field is Activity Date. Column is Sales Rep. Save.
