As mentioned on SuiteAnswers Answer ID 11844, two of the possible reasons why user cannot inline edit a field are either when the field's display type is Inline Text or Disabled or when it is hidden on the preferred form.

In addition, when Store Value is not checked for the custom field, as the setting suggests, it cannot store the value entered on the field. Thus, it is also not available for inline editing.
