Default the Expected Ship Date to X number of days after Sales Order Transaction Date

First, you need to make sure that Available to Promise Feature is not enabled under Setup > Company Enable Features > Items & Inventory > Inventory, otherwise the defaulting will not work.

The Field that controls the number of days can be found under Setup > Accounting > Shipping > Number of Days to Shipment.
